Mousse au Chocolat

 

I grew up eating this classic french dessert, which became soon something impossible to eat for me. But as I couldn't accept to not eat one of my favourite dessert anymore, I spent hours developing a vegan alternative, which happened to be so easy to make! It is the perfect recipe when you have guests over (adults or kids :))

Ingredients:

  • 1 cup of aquafaba (from a can of chickpeas)
  • 1 pinch of salt
  • 1 cup cocoa powder
  • 1 cup cocoa butter 250 ml
  • 3/4 cup of maple syrup
  • 1 vanilla pod

In a sauce pan mix together the cocoa powder,cocoa butter and maple syrup. Heat on low heat. When the chocolate texture is smooth, let it cool down.

Drain the chickpea water into large glass bowl. Keep the chickpeas for another use, like a salad...

Using an electric egg mixer, beat the chickpea water called aquafaba into stiff peaks. Add a pinch of salt. When you the peaks stand straight up when the beaters are lifted from the mixture, the aquafaba is ready.

Very gently mix the aquafaba and chocolate. Cut the pod into half (in its length) and scrape out the seeds, add them into the mixture.

Put into glasses or small bowl and place in the fridge overnight or at least 3 hours for the mousse to set.
