One of the first things I buy when I travel and I miss in Dubai…KOMBUCHA!

Because Kombucha is a fermented drink you can't find it in the UAE although a few vegan restaurants serve it under the counter (PM me if you want to know more), the easiest is to make it at home!

I started my own Kombucha production a few weeks ago. It is a fairly easy process, there are only a few basic rules to follow to avoid any contamination. First step: you need a kind friend to give or sell you a SCOBY - SCOBY stands for Symbiotic Colony Of Bateria and Yeast.

Once the SCOBY is in a clean jar, healthily floating in a cold sugary tea, let the fermentation play its magic for 5 to 7 days. A new SCOBY will grow on the top of the original one. Your kombucha is ready! You have two options: do a second fermentation to flavor your kombucha and make it fizzy or drink it directly. 

Now you know what is really behind Kombucha, you may wonder if this “mushroom tea” is really healthy and what are the benefits of drinking it: 

  • Probiotics – Good bacteria

A large volume of probiotics is produced during the fermentation process. What are probiotics? They are “good” bacteria which help to maintain a healthy digestion and balanced gut flora

  • Bad bacteria

In addition of the polyphenols in tea, acetic acid is produced during the fermentation process. These substances are able to kill harmful microorganisms and have antibacterial properties

  • Antioxidants

Kombucha is a rich source of antioxidants that fight free radicals and reactive molecules involved in cells damage. It also helps prevent the growth of cancerous cells

Drinking Kombucha is super healthy in general. It’s been recognized not to only improve but also preserve digestion and gut health, therefore mental clarity and mood stability. However Kombucha should not be abused, and 0.5L per day is usually the recommended volume to drink (not recommended during pregnancy).
