Chocolate and Pistachio Granola

Chocolate and Pistachio Granola

Kept in a jar, this granola is ideal for breakfast or snacks… just add a few spoons of granola in a coconut yogurt or as topping in a apple puree or even on an acai bowl, (my favorite way to start the day with a healthy breakfast!)

Ingredients:

  • 3 cups of rolled oats, I use gluten free oats
  • 1 cup of buckwheat
  • 1 cup of coconut flakes
  • 1 cup of pistachio
  • 1/2 cup of chia seeds
  • 1/2 tsp of salt, preferably unrefined sea salt or himalayan pink salt
  • 1/4 cup of coconut sugar
  • 1/2 cup of maple syrup
  • 1/3 cup of coconut oil
  • 1 tsp of cinnamon
  • 1/2 cup of cocoa powder
  • 1/4 cup of cocoa nibs, optional

Preheat the oven to 350°F/175°C. Place the pistachios in a food processor for a few seconds to chop them roughly.

In a big bowl combined all the dry ingredients (pistachios, oats, buckwheat, coconuts flakes, chia seeds, cocoa nibs and coconut sugar). In a small saucepan, melt the liquid ingredients (coconut oil and maple syrup). Add the cinnamon, salt and cocoa powder. Stir until a nice smooth chocolate. Pour the chocolate mix over the dry ingredients and mix well.

Dress your baking tray with a parchment paper and spread the mixture out evenly. Bake for 12 min stirring every 5 min to avoid any burning.
