Raspberry Dark Chocolate Truffles

This year for Easter, we are not purchasing any chocolate, it will all be homemade! 

Ingredients for 15 Truffles

  • 15 dates (Medjool dates are great for this recipe) 
  • 1/2 cup of raspberry powder 
  • 1/4 almond powder 
  • 1/4 cocoa powder 
  • 1/4 cocoa butter (melted) 
  • 1/8 maple syrup 

Mix together the cocoa butter, cocoa powder and maple syrup, stir well to obtain a smooth chocolate.

In a food processor add in the dates, almond powder and chocolate. 

Use a tablespoon to make balls, roll it into your hands to make a nice round shape. Place the raspberry powder in a plate and roll each ball in it. 

Store in airtight container in the fridge for a couple of hours. Ready to enjoy! You can keep the truffles up to a week... although they never last that long in my house!
