Quick Kale Pesto Pasta

Probably the easiest recipe for a quick dinner during the week. I'm on my way to a women networking event and I want to enjoy it fully without looking for canapés and being tempting by unhealthy options... 

Ingredients Pasta:

  • 1 lentils pasta box or other gluten free/vegan options. I like the proteins chickpeas ones :) 
  • Salt, pepper
  • Nutritional yeast (optional) 

Pesto:

  • 100 g of pine nuts
  • 2 lemons
  • 150 ml of olive oil
  • 70 g of kale 
  • 50 g of fresh basil 
  • Pinch of salt & pepper

Bring some water to a steady boil and add a pinch of salt. Add the pasta to slow boiling water and stir occasionally. Cook for 4 min (or as indicated on the pasta box).

In the meantime, prepare the pesto. Mix together all the ingredients in a food processor and blend for 2 min.

Drain the cooked pasta and put it back into the pan. Add the pesto and the green peas. Stir gently.

Ready to serve! Sprinkle with nutritional yeast for a cheese effect. Enjoy!
