Chai Poached Pears & Cardamom Chocolate Recipe

One of my favorite recipe and probably the quickest and easiest one! 

It reminds me of my childhood when my dad was making “poire pochees au vin rouge” (poached pear in sweet red wine). It is so easy and so delicious. I cannot recommend this recipe enough! It is an amazing dessert for any occasion : friends dinner party or a romantic date. 

Ingredients: 

- 5 small pears 

- 4 cups of water

- 2 tsp of sliced fresh ginger 

- 1 tsp of whole cloves

- 1 star anise pod, broken in half

- 4 cardamon pods, broken in half

- 2 cinnamon stick, broken in half

- 1 cup of Cocoa powder 

- 1 cup of Cocoa butter 

- 180 ml of Maple syrup 

- 1/3 cup of pistachio 

Pour the water in a pan, add all the spices* (ginger, cloves, anise, cinnamon and cardamon - keep 1 cardamon pod for later), bring to a boil. 

Peel the pears and place them in the water. Turn the heat down to a simmer. Cover and cook for 20 to 30 minutes - cooking time depends on the pear size, leave them in the water until you can easily stick a knife through the pears. 

In the meantime, slowly melt the chocolate powder, cocoa butter and maple syrup together using a small pan. Stir well to obtain a smooth chocolate. Open the last cardamon pod and add it to the chocolate for 10 min before remove it. 

Drain the pears and place them on a plate, dress with the chocolate topping. Crushed the pistachios with a knife and sprinkle on the chocolate

Et Voila! 

Serve alone or with a vanilla ice cream! 

* for the lazy or/and busy ones, this step can be replaced by dropping a Chai tea bag in the water :)
